These are recent restaurant inspection reports for Alachua County — from April 5-10 — filed by state safety and sanitation inspectors.

The Florida Department of Business & Professional Regulation describes an inspection report as “a ‘snapshot’ of conditions present at the time of the inspection. On any given day, an establishment may have fewer or more violations than noted in their most recent inspection. An inspection conducted on any given day may not be representative of the overall, long-term conditions at the establishment.

Routine inspection April 5.

Follow-up needed: Warning issued.

18 total violations, with 3 high-priority violations:

High Priority - Employee wiped hands on clothes/apron/soiled towel. Employee wiped fingers on soiled wiping cloth next to Station then continued to work with sushi rolls.

High Priority - Raw animal food stored over ready-to-eat food. Raw scallops, raw pork, raw shrimp and raw in shell eggs stored above apples, oranges and lemons in walk in cooler. **Repeat Violation**

High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. cooked shrimp (73°F - Cold Holding); rice (72°F - Cold Holding); noodles (57°F - Cold Holding); cooked sweet potatoes (68°F - Cold Holding); wontons (61°F - Cold Holding) items scattered around kitchen area. Per manager items were placed out recently and were to be placed into walk in cooler. In reach in cooler at center of cook line. beef (45°F - Cold Holding); chicken (44°F - Cold Holding); cooked tofu (61°F - Cold Holding). Items placed inside of unit at open per manager. Items stacked very high over fill line. Employee removed portion of product above fill line.

Intermediate - Accumulation of black/green mold-like substance in the interior of the ice machine. Spots of mold like substance on deflector plate on ice machine.

Intermediate - Handwash sink not accessible for employee use at all times. Hand washing sink in/next to dish area. Employee had to move a cutting board, wiping cloths and a large prep table to access hand washing sink.

Intermediate - No currently certified food service manager on duty with four or more employees engaged in food preparation/handling. Basic - In-use wet wiping cloth/towel used under cutting board. Towel under cuttingboard in prep area. Under cuttingboard used for cutting meat.

Basic - Nonfood-contact equipment exposed to splash/spillage not constructed of materials that are corrosion resistant, non-absorbent, smooth and easily cleanable. Large sheet of plywood used as a shelf across from walk in cooler. Wood used as shelving near same area. Items not sealed.

Basic - Single-use containers (boxes and/or cans) reused for the storage of food. Ice burg lettuce box reused for storage of wontons in freezer area. Tofu box reused for of wontons. Item in direct contact.

Basic - Soil residue build-up on nonfood-contact surface. Buildup of debris on side of door to walk in cooler. Buildup of debris on side of door to walk in freezer. Buildup of mold like substance on gasket of white chest freezer in bar area

Basic - Time/temperature control for safety food thawed in an improper manner. Shrimp thawing in bucket of standing water under hand washing sink in kitchen area. Pork thawing at room temperature in bus tub near back door.

Met standards.

Four total violations, with two high-priority violations:

High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area. Observed 2 flys on the truck.

High Priority - Time/temperature control for safety food hot held at less than 135 degrees Fahrenheit or above. Observed cooked chicken 108°. This is being moved covered, back to the smoker. **Corrective Action Taken**

Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. Observed lack of paper towels at the hand wash sink. Towels were added. **Corrected On-Site**

Three total violations, with two high-priority violations:

High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed in the 3 door reach-in cooler beef at 47°. This was moved to a colder part of the reach-in cooler. (Butter was 21° in the same reach-in cooler) **Corrective Action Taken**

Intermediate - Accumulation of black/green mold-like substance on/around soda dispensing nozzles. Observed in the dining area, the right hand self service machine, the left soda nozzle has foreign substance on it. This was cleaned twice. **Corrected On-Site**

Intermediate - Handwash sink not accessible for employee use due to being blocked by garbage can. Observed the 3 compartment sink hand wash sink blocked by a tray. The tray was removed. **Corrected On-Site**

Basic - Employee personal food not properly identified and segregated from food to be served to the public. Observed a Wawa cup stored over public food, in a reach-in freezer on the fry line. This was discarded. **Corrected On-Site**

Basic - Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. Observed a cell phone on the cook line, stored on the chest freezer. This was removed. **Corrected On-Site**

Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit. Observed 2 long handled spoons in standing water, on the front line. The water was discarded and replaced with a dry cup. **Corrected On-Site**
